Mini Caprese Breakfast Bagels

I have an obsession with breakfast foods.
Now, I know that I’m totally not alone in this obsession. I know that all of you out there love breakfast just as much as I do. We all love our oatmeal, we all love our granola, we all love our yogurt, and we all love our nut butter-banana toast. That’s why I like you guys. You’re just like me!
If you also like breakfast sandwiches in addition to all of those treats I mentioned above, you’re going to be excited! At least, I was. I was excited thinking about this sandwich, I was excited while I was making this sandwich, and I was the most excited as I was eating this sandwich.
You see, in addition to having an obsession with breakfast, I also have an obsession with anything caprese-like! Don’t believe me? This is what I ate two days ago and this is what I ate the week before that.
Tomatoes. Mozzarella. Fresh Basil.
Really, just heaven on Earth.
Add a runny, dippy egg in that mix? And a mini whole-wheat bagel? Ohhh boy. Now I’m in trouble!
I like trouble. Not really. I’m totally lying about that. I try to stay out of trouble. However, this sandwich? I don’t have a chance. I’m totally in trouble.
MIni Caprese Breakfast Bagels
2 mini whole-wheat bagels
2 large eggs
1 medium tomato
4-5 fresh basil leaves
4 slices mozzarella cheese
Turn oven broiler on low. Place bagels halves face up on a baking sheet and toast for 1-2 minutes or until crisp. Flip bagels halves and repeat on back side.
Meanwhile, in a large skillet, prepare two eggs over-easy. Crack eggs into skillet and cook 1-2 minutes until bottom of egg is set and flip, cooking an additional 1-2 minutes until egg white is completely cooked and egg yolk is still ‘runny.’
Place one egg on each of the bottom halves of the bagels. Top with a slice of tomato, 2-3 fresh basil leaves, and 2 slices of mozzarella cheese. Return baking sheet to oven and broil for 1-2 minutes or until cheese is melted.
Remove from oven and top with other half of bagel.
Please excuse the burnt bagel top. That’s just the way we like it. We always fight argue lovingly over who gets the burnt grilled cheese, burnt toast, and burnt hot dogs.
This is messy. This is delicious. This is trouble.
